Miran Gomboc started at home, out of curiosity. Today, he works at the oven with his two sons, in Radenci and Lenart.

A father, two sons and one oven

Behind Pizza na i is a family, rather than a chain or an investor: Miran Gomboc and his two sons. They work at the oven themselves, in both Radenci and Lenart, and know every step because they taught themselves how to do it.

Their roles fell into place naturally. Miran looks after the dough. His sons experiment, with a better feel for what younger guests fancy. They came up with pizzas you might not expect here: pulled pork with homemade whisky sauce, chicken and curry, and mortadella with truffle cream.

The classics stay on the menu too. Both side by side — that is the menu that suits this family.

The beginning

The seaside holiday that changed everything

It all started at home, rather than in a professional kitchen. Miran was baking pizzas long before anyone imagined making a living from it. The turning point came on a seaside holiday in 2018: his first authentic Neapolitan pizza.

“When I tasted it, I thought: this is something completely different,” he recalls. “I absolutely loved the dough.”

Back home, he started researching. Which technique, how much time, what flour? A year later came his own oven and the first pizzas for family and friends. The response was so good that eventually the question arose: could this become something more?

The turning point

Ten pizzas on our first day

Then the COVID-19 pandemic arrived. Miran and his wife both worked at a nursery and could not work for three months. She gave him the push: “Give it a go. You have nothing to lose.”

So he did. He sold ten pizzas on the first day. The pizzas were baked at home, orders came in by phone, and the whole family helped organise things.

Even after restrictions eased, he kept his job: work in the morning, the oven in the evening. After about six months, he left his job and threw himself into making pizza.

The first location opened in Radenci. Six years later, the pizzeria in Lenart followed.

Most people look at the toppings. For Miran, what matters comes a step earlier — the dough. That is exactly what guests praise them for most often.

48 hours of rest, then 90 seconds at around 420 °C. They do not skimp on ingredients: “If you want a good pizza, you cannot skimp on the ingredients.”

Pizza is meant to be eaten with your hands.

That is why we do not serve cutlery. In Naples, a slice is folded and picked up by hand. It tastes best that way — and, honestly, it is also the most enjoyable way to eat it.
